2 tbsp oil

Making the Perfect Masala Dosa

Step 1: Soak the rice, urad dal, and fenugreek seeds in water for 6-7 hours.

Step 2: Drain the water and grind the rice and urad dal together to form a smooth batter. Add salt and water as needed to make a thin batter.

Step 3: Leave the batter to ferment for 8-10 hours or until it doubles in volume.

Step 4: To make the potato filling, heat oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Once the seeds start to splutter, add chopped onions, green chili, and ginger. Sauté until the onions turn translucent.

Step 5: Add the mashed potatoes, turmeric powder, red chili powder, and salt to taste. Mix well and cook for 5-7 minutes on low heat.

Step 6: To make the chutney, grind the grated coconut, green chilies, tamarind, and salt to a smooth paste. Add water as needed.

Step 7: To make the sambar, pressure cook the toor dal with chopped onions, tomatoes, mixed vegetables, turmeric powder, red chili powder, cumin seeds, mustard seeds, and salt. Once the dal is cooked, add water as needed to get the desired consistency.

Step 8: Heat a non-stick tawa or griddle and pour a lade of dosa batter in the center. Use the back of the ladle to spread the batter in a circular motion, making a thin layer.

Step 9: Drizzle a little oil around the edges of the dosa and let it cook on low heat until it turns golden brown.

Step 10: Add a spoonful of the potato filling on one side of the dosa and fold the other side over it.

Step 11: Serve the dosa hot with coconut chutney and sambar.

Tips for Making the Perfect Masala Dosa

For a crispy dosa, make sure the tawa is hot enough before pouring the batter.
If the dosa sticks to the tawa, add a little oil to the edges to loosen it up.
Use a non-stick tawa for easy flipping and to avoid the dosa from sticking.
To get a perfect potato filling, make sure the onions are sautéed well and the spices are well-mixed with the mashed potatoes.
